“She’s always buzzing just like neon…” Oh John Mayer, if you only knew. Some days I don’t feel like I take a breath until I lay down, but I love the busy. I love the whirlwind. I love learning and growing.
This semester I have two clinical placements. One off campus, 8 hours a week and one on campus, for 3 hours a week. So where the class load has backed off, the client load has grown! This is what I was waiting for all last semester. A chance to take some shaky baby steps into the field and see if I can fly. Was that too cheesy? Sorry, I just can’t help it sometimes.
I love to eat. I love good food. I love to cook. So I’ve had to learn how to make good food at home, and quickly. Easily. So I’ve decided to share my quick recipes with you in a little series. And why not start with dessert first? That’s the best way to live your life!
This recipe was born out of experimenting with different ways to “take” raw local honey for my allergies. Because you might like to eat a spoonful of honey on it’s own, but I’ll pass, thanks. So single-serving Paleo fudge was born! It’s great for a quick chocolate fix, or multiply it to make a fruit dip or to share with a friend!
Paleo Fudge for One
Ingredients:
1 tsp cocoa powder
1 tsp raw local honey (if you multiply it, adjust to your taste)
1-2 tsp Tropical Traditions Coconut Cream Concentrate, melted
a dash of cinnamon
Directions: Combine everything!
Enjoy! It’s just over a tablespoon. A perfect little treat!
