I have to be honest. I am taking a break from studying pediatric dysphagia (swallowing and feeding disorders in children) and so posting a recipe has all sorts of different ideas running through my mind. Everything from the motor reflexes involved in swallowing to why kids are picky eaters. I’m learning that it can take a child 20+ times of trying a food to even really taste it or understand the taste. If they have tried it 3-5 times and still say they don’t like it, it’s still not time to give up. Sorry, mom and dad.
For so long, I HATED fish. I didn’t even like the smell of a restaurant that served fish. I was a baby about it, really. So I’m sure it’s a shock to my parents that my next quick Paleo recipe is tilapia! Maybe if they had made me try fish 20 times as a kid, I would have liked it!
This recipe is SO easily and delicious. My favorite part: the clean up is easy. And let’s be real, you all need a healthy detox recipe after yesterday’s Super Bowl celebratory eating (or maybe you ate out of boredom during the blackout).
I wish I had better pictures of this. I just decided while I was eating it that it was too good not to share! Grab some foil, set that oven to 350 and you’ll have dinner ready in no time!
Ingredients
Tilapia filets (one per person) Lemon Juice Olive oil Dill Salt and pepper (or seasoning of your choice)Heat your oven to 350 degrees. Grab enough foil to make a fish pocket. Now I wish I could tell you the secret to an awesome fish pocket. Mine always look wonky, but work out just lovely anyway. I like to make the pocket, spray it with a little olive oil spray and throw the tilapia in there. Squeeze some fresh lemon juice on top, drizzle some olive oil, sprinkle your favorite seasoning on top and last add the dill. Close up your fish pocket and throw it in the oven for about 15-20 minutes. You’ll know it’s done when it’s opaque (you can’t see through it anymore). I served mine with homemade tzatziki, some sautéed sweet potatoes and salad.

Simple, easy and tasty! Made this at work in the toaster oven. And people were not complaining of a fishy smell… so that is another positive!

Laura, you definitely can! I would add 3-7 minutes to the bake time! But still just look that the fish is no longer translucent! 🙂
I thought Paleo does not include dairy, so how does the tzatziki fit in? It sounds delish, but dairy does not agree with me.
I make a tzatziki with Greek yogurt because I tolerate small amounts. I most often eat this tilapia with my magic sauce dressing, that’s completely paleo. You can find the recipe on the Tuna “Noodle” Casserole page.
