Fun Size Meatloaf and a Giveaway!

I really wanted to have a sweet treat recipe to share with you, but I’m just not quite ready and tonight’s dinner was a surprise success!

You could call these meatloaf muffins, but let’s be honest, that’s weird. And fun size just means you get to eat more, right? I’ve only made one meatloaf in my life, and it was kind of just alright. I think because I made it with turkey. Grass-fed beef is clearly the better choice – these were delicious!

The combination of sweet potato and homemade ketchup (don’t worry, it’s easy) with the beef and some garlic make these sweet and salty and just well perfect, a little bit nostalgic!

Fun Size Meatloaf

Serves 4 (two meatloaves)

1 1b ground grass-fed beef
1 farm fresh egg
1/2 cup almond meal
1 mini sweet potato, peeled and grated
2 green onions (green part included), minced
1 tsp sea salt
1 tsp garlic powder
1/4 tsp chili powder
1/4 cup homemade ketchup (recipe below)

hot sauce for serving (optional)

Ketchup:

  • 1 can (6 ounces) tomato paste
  • 2 tbsp apple cider vinegar
  • 2 tsp raw honey
  • 1/2 tsp garlic powder
  • 1/4 tsp dry mustard
  • 1/4 cup water
  • 1/4 tsp cinnamon
  • 1/4 tsp sea salt
  • 1/8 tsp cayenne pepper (optional)

Combine all your ketchup ingredients in a food processor until smooth (or whisk together until smooth). Set aside, in the fridge!

Pre-heat your oven to 350 degrees and prepare your muffin tin. I used silicone liners. You can also grease them with some coconut oil/animal fat of your choice.

Mix all your ingredients in a large bowl and don’t be afraid to get your hands dirty! They’re the best mixing tools we have!

Divide meat mixture among 8 muffin tin cups. Bake for 30 minutes (or until brown and a little bit crispy on top).

Enjoy with some hot sauce, maybe some coconut carrot fries on the side! [Slice some carrots, toss them in Tropical Traditions coconut oil and garlic powder and bake at 350 for 20 minutes!]
